Settings → price list. Every rate you've got is there. Tap one to change what it's called, what it costs or the unit it's priced by; delete the ones that are wrong or out of date.
Putting your prices up is worth doing properly: change the rate here once and every future quote uses the new figure. Quotes you've already sent don't change — they're a record of what you offered.
