Settings → your business. What you put here appears on every quote and invoice.
Logo — upload it once and it sits on the letterhead. Change it whenever you like; new quotes pick it up.
Quote and invoice numbers — the prefix is yours to choose. It doesn't have to start with Q: your initials, your firm, anything up to ten characters. You can also set what number to start at, so you carry on from wherever your last system got to.
VAT — set whether you're registered and your rate. If you're not registered, no VAT is added and nothing on the quote implies otherwise.
Payment terms — free text, shown on every quote, and the number of days in it is what the Money tab uses to decide what's overdue.
